This exclusive olive oil is made exclusively from ripe Galega olives—a traditional Portuguese variety. The oil captivates with a delicate, fresh aroma reminiscent of green apples. Its taste is fresh with a subtle bitterness and a pleasantly spicy aftertaste.
Shortly after harvest, the olives are transported directly to the Esporão mill in Reguengos de Monsaraz. There, the gentle cold extraction process begins immediately to optimally preserve the precious aromas. Immediate pressing and the use of a heat exchanger shorten the extraction time, thus emphasizing the freshness of the oil.
A centrifuge mechanically separates the pomace from the oil, which is then filtered and carefully bottled. Herdade do Esporão thus guarantees the highest quality with a maximum acidity of only 0.2%.
