Pure olive oil.
Exclusively from ripe Galega olives. The aroma is reminiscent of green apples. Fresh in taste, slightly bitter, slightly spicy in the finish.
Shortly after harvest, the Galega olives are taken to the Esporão mill in Reguengos de Monsaraz, where cold extraction begins immediately. The fruits are immediately pressed and passed through a heat exchanger to shorten the extraction time and preserve the aromas. A centrifuge mechanically separates the pomace from the oil, which is then filtered and bottled.
