Lung Ching (also called Longjing) is one of China's most famous green teas and is traditionally grown in the Hangzhou region of Zhejiang province. This exquisite tea is hand-picked and processed, which makes it special not only visually but also in terms of taste.
Its flat, elongated, emerald-green leaves are smooth and of high quality. The fresh tea leaves are heated in cast-iron pans immediately after harvesting to stop oxidation—a laborious process in which the leaf is turned by hand for about 15 minutes. It is then rolled, dried, and flattened, giving Lung Ching its characteristic shape.
The result is a mild, clear green tea with a fresh, slightly sweet aroma. The infusion begins with an orange hue, which transforms into a delicate jade green as it steeps – a visual and gustatory delight.
