Portugal is known for its wines, olive oils, and culinary specialties. But beyond the well-known culinary worlds, there is a distillate deeply rooted in the country's culture: Medronho. This traditional strawberry tree brandy has been produced for generations in the mountain regions of the Algarve and is considered one of Portugal's most original spirits.

However, not all Medronho is created equal. While many brandies are primarily known for their strength, Medronho Feuerwasser Phoenix demonstrates how refined, balanced, and characterful this traditional specialty can be.

The Fruits of the Serra

The basis for any high-quality Medronho is the fruit of the strawberry tree (Arbutus unedo), native to the hills and mountains of southern Portugal. Especially in the Serra de Monchique and Serra de Espinhaço de Cão, these resilient trees have shaped the landscape for centuries.

From Passion to Vocation

Behind Feuerwasser Phoenix are Mario and Peggy Zaffetta, who decided many years ago to start a new life in Portugal. What began as a love for the Algarve gradually developed into a passion project.

On their approximately five-hectare property in the Serra, they now dedicate themselves with great devotion to the strawberry trees and the production of Medronho. This is not about mass production or industrial processes. Instead, the focus is on the conviction of creating something special from a traditional product.

Each bottle tells a story of patience, experience, and respect for a craft that has been cultivated in Portugal for generations.

Handicraft from Tree to Bottle

The harvest of Medronho fruits begins in autumn and often extends into winter. Since not all fruits ripen simultaneously, the trees are visited multiple times. Only perfectly ripe fruits proceed to further processing.

After the harvest, natural fermentation follows. Over several months, the fruits develop their aromas and create the basis for the later brandy.

Distillation only begins in spring. Mario relies on particularly gentle processing. Modern technology is not used to replace tradition, but to refine it. The goal is a distillate that preserves the typical characteristics of Medronho while being exceptionally clean and harmonious.

Every production step is carried out with great care and under constant control. Yield is sacrificed for quality. This uncompromising standard is precisely what makes the difference.

Tradition Meets Precision

The production of Medronho Feuerwasser Phoenix follows not only traditional methods but also a clear quality standard. The timing of the first distillation in the year already holds special significance for Mario. Traditionally, distillation begins around the first full moon in April – a connection to the natural rhythms of the Serra, which has been part of Medronho culture for generations.

But despite all the attachment to tradition, one thing is paramount in the distillery: precision.

The specially custom-made still differs significantly from many classic systems. Instead of directly heating the mash, Mario works with a water bath system. This allows for particularly gentle and even heating. The entire process takes longer, but enables a much more controlled distillation.

Additionally, a so-called reflux lens ensures that heavier and less desirable components of the distillate are returned. The result is a particularly pure and balanced brandy. Another special feature is the integrated gin box, which Mario uses in an unusual way. With the help of calcium carbonate, additional unwanted accompanying substances are reduced, giving the Medronho its exceptional mildness. In this process, "that harshness" is removed.

Quality Takes Time

A distillation day begins early and often ends late in the evening. Although the still has a capacity of 150 liters, only about 100 liters of mash are deliberately processed per run. This leaves enough room for clean and controlled distillation.

The commitment to quality is particularly evident in the so-called foreshots – the first part of the distillate that does not make it into the bottle. While many producers keep this section as small as possible, Mario separates generously and deliberately sacrifices yield for purity. As a result, only nine to 13 liters of finished distillate remain from 100 liters of mash.

But even after distillation, the Medronho is not yet ready.

The water used to adjust the drinking strength is slowly added drop by drop over several days. This allows the alcohol and water to blend particularly harmoniously. The brandy then rests for several months in stainless steel tanks before finally being bottled.

This patience and uncompromising care in every single step are partly responsible for the Medronho Feuerwasser Phoenix surprising even experienced connoisseurs: powerful and full of character, yet remarkably soft, clear, and balanced.

Why This Medronho Is So Special

Many people associate Medronho with a strong, pungent schnapps. This is not surprising at first glance, as traditional strawberry tree brandies often have a high alcohol content and a very direct character.

The Feuerwasser Phoenix, however, takes a different approach.

Here, the focus is not on sharpness, but on the aroma of the fruit. The result is a Medronho with remarkable clarity, pleasant mildness, and exceptional purity. Despite its strong alcohol content, it remains balanced and soft on the palate.

Connoisseurs particularly appreciate the fine fruity notes that linger long and give the brandy surprising elegance.

This quality has not gone unnoticed by expert juries. The Medronho Feuerwasser Phoenix has received multiple awards and medals for its exceptional quality in regional competitions.

Small Batches, Great Quality

While many spirits are produced in large quantities, only a few hundred bottles of Feuerwasser Phoenix are produced annually.

Each individual bottle is filled, labeled, and numbered by hand. This limited scale makes it possible to personally oversee every step and maintain consistently high quality.

Therefore, whoever opens a bottle of Phoenix Medronho is not just holding a spirit, but a true handcrafted product from the Algarve.

How to Properly Enjoy Medronho

In Portugal, Medronho is traditionally enjoyed after a meal. But high-quality varieties like Feuerwasser Phoenix deserve a little more attention.

It is best enjoyed at room temperature in a suitable spirits glass. Give the distillate some time to breathe and first perceive the aromas before taking the first sip.

Instead of drinking it quickly, it is worth savoring the Medronho slowly. This allows the fruity notes and fine nuances, which result from the elaborate production, to unfold.

Medronho harmonizes particularly well with Portuguese cheese, dark chocolate, or simply as a special end to a successful evening.
