Pai Mu Tan Special, also known as "White Peony," is a particularly exquisite white tea from China, traditionally reserved for the imperial court. The tender young shoots and leaves are picked exclusively by hand in spring at dawn, when the leaves are particularly rich in active ingredients. They are then gently dried on shaded bamboo mats – entirely without artificial processing or roasting.
