Paio de Lombo is one of the finest delicacies of Portuguese sausage making. This ham-like fillet impresses with its intense aroma, tender, smooth texture, and a fine strip of intramuscular fat, which gives the meat exceptional juiciness and unmistakable tenderness. The flavor: subtly salty with a subtle, pleasant acidity.
Made from the meat of free-range black pigs, the fillet is matured using traditional methods and then gently smoked at low temperatures – for an authentic taste experience with an artisanal touch.
