A rice of the Japonica variety that is more voluminous and velvety! Carolino is the most authentic Portuguese rice variety. This rice swells and produces more starch than the other varieties. Due to its properties, it better absorbs the flavors of the spices with which it is cooked. After cooking, the rice has a creamier consistency.
Rice has been cultivated in Portugal since the rule of the Moors. Then as now, rice is grown in the basins of the Mondego, Tejo, Sorraia, Sado and Guadiana rivers.
