Botanical: Piper nigrum L.
Green pepper is made from early-harvested, unripe pepper berries.
To prevent the black color of the pepper, the fruits are placed in an acidic or salty brine.
Due to the early harvest of the green pepper and the lower degree of ripeness, it has a fresh, herbaceous taste and a low level of spiciness. Whole or freshly ground, it goes perfectly with red meat such as lamb, beef and game.
Cheese preparations are also spiced up with green pepper and in small quantities it even goes well with fruity sauces or strawberries.
Green pepper is the mildest and most aromatic pepper.
