Ceylon cinnamon is obtained from the inner bark of one- to two-year-old cinnamon tree shoots. The bark is carefully scraped and stacked in up to 10 tubes. The outer bark is a dull yellow-brown color with lighter longitudinal stripes, while the inner bark is a deep dark brown. The broken pieces are short-fibered and break down into fine layers.
