Why specialties from the Azores are so extraordinary

Azoren Woche

The Azores taste different – and for good reason.

In the middle of the Atlantic Ocean, some 1,500 kilometers from mainland Europe, lies a place where nature, tradition, and quality combine in a rare way: the Azores. This archipelago, belonging to Portugal, is known for its lush green pastures, mild, balanced climate, and an agriculture still strongly influenced by craftsmanship and respect for nature. It is precisely these special conditions that make products from the Azores so exceptional – and are the focus of our Azores Week.

A climate you can taste

The Azores benefit from a unique maritime climate. Mild temperatures, regular rainfall, and nutrient-rich volcanic soils ensure that the grass on the pastures grows almost year-round. Cows here spend a large part of their lives grazing on fresh, succulent grass in an environment that corresponds to their natural behavior.

This form of pasture farming directly impacts the quality of the milk: it is particularly aromatic, balanced, and rich in valuable nutrients. Pasture-raised milk forms the basis for many of the specialties you can discover during our Azores week.

Cheese from São Miguel – time, patience and craftsmanship

São Miguel, the largest of the Azores islands, is famous for its cheese tradition. Characterful cheeses are produced here, prized far beyond Portugal's borders. Our selection includes various cheeses at different stages of maturity – from mild and creamy to strong and spicy.
Or the cheese from the island of São Jorge.

Whether as a whole cheese, in handy pieces, or as a fine sliced cheese from Milhafre : all share the common thread of careful production using high-quality pasture-raised milk and the time given to the cheese to mature. Each stage of maturation brings out its own unique aromas and showcases the diversity of Azorean cheese culture. These cheeses are not mass-produced, but rather an expression of patience, experience, and regional expertise.

Organic pasture milk – pure taste of nature

Milk from the Azores is something special. The organic pasture-raised milk fromMilhafre and Terra Nostra stands for naturalness and transparency. The cows graze on open pastures, the use of chemical-synthetic additives is severely limited, and processing is gentle.

The result is milk that tastes fresh, full-bodied, and pure – ideal on its own, in coffee, or for further culinary use. It is a prime example of how closely animal welfare, the environment, and product quality are linked.

Ghee and grass-fed butter – concentrated indulgence

Good milk makes good butter – and in the Azores, even more so. Milhafre's pasture-raised salt butter impresses with its delicate melt, natural color, and balanced flavor. It's perfect for bread, cooking, or for enhancing the flavor of vegetables and fish.

Another highlight is the ghee from Azor Ghee . The gentle clarification of the butter results in a particularly pure fat with a high smoke point and intense aroma. Ghee from the Azores combines traditional production methods with the finest raw milk quality and is versatile in the kitchen – from hot dishes to Ayurvedic-inspired cuisine.

Atlantic tuna – sustainable and high-quality

Besides dairy products, the Azores are also known for their fish. The islands lie in one of the richest fishing grounds in the Atlantic, and tuna fishing here is traditional and selective. Santa Catarina , one of the Azores' most renowned producers, processes its tuna with great care.

Our selection includes tuna in jars and cans, either plain or enhanced with select ingredients. The fish are caught individually, processed immediately, and gently preserved. The result is firm, succulent flesh with a clean, natural flavor – a far cry from mass-produced industrial tuna.

Enjoyment with origin – conscious shopping during Azores Week

In a time when many food products seem interchangeable, origin and production methods are becoming increasingly important. Products from the Azores stand for transparency, traceability, and a close connection between producers and nature. The manageable size of the islands allows for short transport routes within the region and processing that often takes place directly on site. This ensures that freshness, flavor, and nutrients are preserved to the best of our ability.

This commitment to quality is particularly evident in cheese, dairy products, and fish. Producers in the Azores rely on time-honored methods, largely foregoing industrial acceleration and giving their products the time they need. The result is food with character, depth, and authenticity.

With our Azores Week, we want to offer you not only exceptional products, but also raise awareness of mindful enjoyment. Whether for your daily breakfast table, for special occasions, or as a high-quality ingredient in your kitchen – specialties from the Azores bring a piece of unspoiled nature into your everyday life.
