Did you know? Botanically speaking, the coconut is not a nut , but a stone fruit. It grows on the coconut palm, which thrives in tropical regions such as Southeast Asia, Sri Lanka, the Philippines, and Brazil.

Valuable ingredients of coconut:

-  Coconut contains healthy saturated fatty acids, especially lauric acid, which can have antimicrobial effects.

-  Contains fiber, iron, potassium, magnesium, zinc and small amounts of vitamin C.

-  Coconut oil is particularly heat-resistant, ideal for frying and baking.

-  Coconut blossom sugar has a low glycemic index (approx. 35) – ideal for blood sugar control.

1. Coconut Chocolate Energy Balls

Coconut Energy Balls

Ingredients:

  • 100 g dates
  • 50 g desiccated coconut
  • 2 tbsp coconut oil
  • 1 tbsp coconut blossom sugar
  • 2 tbsp cocoa powder or finely chopped dark chocolate with coconut

Preparation:
Blend all ingredients in a blender until smooth. Form into small balls, roll in coconut flakes if desired, and refrigerate.
Perfect as a healthy snack!


2. Tropical breakfast yogurt with coconut chips

Coconut yogurt

Ingredients:

  • 200 g natural or plant-based yogurt
  • 1 tbsp coconut blossom sugar
  • 1 handful of fresh mango or pineapple
  • 2 tbsp sweet & roasted coconut chips
  • 1 tbsp almond kernels with coconut flakes

Preparation:
Mix yogurt with coconut blossom sugar, top with fruit and coconut chips. For extra crunch, sprinkle some almonds with coconut flakes on top. A tropical start to the day!


3. Hearty coconut curry with roasted coconut pieces

Coconut curry

Ingredients:

  • 1 can of chickpeas
  • 1 can of coconut milk
  • 1 tsp coconut oil
  • 1 tsp curry powder
  • salt, pepper
  • 1 handful of roasted coconut pieces

Preparation:
Heat coconut oil in a pan, briefly toast the curry powder, add the chickpeas and coconut milk, and simmer. Season to taste. Sprinkle with toasted coconut pieces just before serving.
Tastes great with rice!
