Nectarines have a juicy consistency with a sweet and sour, fruity taste and firm flesh.
Nectarines and peaches are also very similar in taste. However, peaches contain more water and less fructose than nectarines. They are therefore juicier, while nectarines taste sweeter and have a firmer texture . Nectarines can also have a slightly tart note.
The nectarine is a derivative of the peach and plum. This is why nectarines have smooth skin. The nectarine stone is almost indistinguishable from a peach stone.
