Aromatic ginger is an excellent and versatile spice and vegetable, hot and spicy, for meat and vegetable dishes and for sweet dishes and tea. Various varieties are offered that depend on the season and climate, such as blue ring ginger, which is milder, rarer and therefore more expensive.
The ginger bulbs - more precisely the rhizomes - are dug up
(handmade), washed and then dried in the sun.
