Chocolate is an essential indulgence for many – but it often comes with a lot of sugar. The good news: There are delicious alternatives that are completely free of refined sugar! Whether sweetened with stevia, maltitol, or cane sugar – these chocolates offer sweet indulgence without the guilt.

Why avoid refined sugar?

Refined sugar is highly processed and provides only empty calories. Excessive consumption can lead to blood sugar fluctuations, cravings, and long-term health problems. That's why more and more people are turning to healthier alternatives.

What alternatives are there?

Advantages of cane sugar over refined sugar

  • Cane sugar contains natural minerals such as calcium, iron and magnesium, which are removed during the processing of white sugar.
  • It has a mild, caramel flavor that goes well with chocolate.

Why is chocolate with a high cocoa content often vegan?

Chocolates with a high cocoa content are often vegan , as they contain only a few basic ingredients: cocoa mass, cocoa butter, and a sweetener . While milk chocolate also contains milk powder, dark chocolate with a cocoa content of around 60–70% usually does not.

Recipe for dark chocolate mousse with 70% cocoa:

Chocolate mousse

Ingredients:

- 200 g dark chocolate (70% cocoa)
- 3 eggs (separated into yolks and egg whites)
- 2 tablespoons sugar (optional, depending on the sweetness of the chocolate)
- 1 pinch of salt
- 200 ml whipped cream
- 1 tsp vanilla extract (optional)

Preparation:

  1. Melt chocolate:
    • Break the dark chocolate into small pieces and melt it over a pan of water or carefully in the microwave. Be careful not to burn it!
    • Once the chocolate has melted, let it cool slightly.
  2. Separate eggs:
    • Separate the eggs. Whisk the egg yolks with the sugar (if using) and vanilla in a bowl until the mixture is creamy.
  3. Beat egg whites:
    • Beat the egg whites with a pinch of salt until stiff peaks form and they become glossy.
  4. Whip cream:
    • In another bowl, whip the cream until stiff.
  5. Mix chocolate:
    • Carefully fold the melted chocolate into the egg yolk and sugar mixture, making sure the mixture remains smooth.
  6. Combine mousse:
    • First, carefully fold the stiffly beaten egg whites into the chocolate mixture. Then gently fold in the whipped cream until a light and airy mousse forms.
  7. Cool:
    • Pour the mousse into small dessert glasses or bowls and chill in the refrigerator for at least 2 hours to allow it to set.
  8. Serve:
    • Before serving, you can dust the mousse with a little cocoa powder or garnish it with grated chocolate.

 

Recipe for chocolate banana cake

Chocolate Banana Cake

Ingredients:

-200 g dark chocolate (70% cocoa)
- 2 ripe bananas
- 100 g butter (soft)
- 100 g sugar (optional, depending on the sweetness of the chocolate)
- 2 eggs
- 200 g flour
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 1 pinch of salt
- 100 ml milk

Preparation:

  1. Preheat oven and prepare dish :
    Preheat the oven to 180°C (top/bottom heat) and grease a cake tin (approx. 20 cm diameter) or line it with baking paper.
  2. Melt chocolate :
    Carefully melt the dark chocolate in a water bath or in the microwave.
    Then let it cool slightly.
  3. Puree bananas :
    Peel the bananas and mash them in a bowl with a fork until they become a puree.
  4. Prepare the dough :
    Cream the softened butter with the sugar and vanilla sugar until creamy. Add the eggs one at a time and mix well.
  5. Mix dry ingredients :
    In a separate bowl, mix flour, baking powder and salt.
  6. Finish the dough :
    Now add the melted chocolate and banana puree to the butter, sugar, and egg mixture and mix well. Stir in the dry ingredients and milk alternately until a smooth batter forms.
  7. Bake a cake :
    Pour the batter into the prepared cake pan and bake in the preheated oven for about 30–35 minutes. Test with a wooden skewer: if it comes out clean, the cake is done.
  8. Let cool and serve :
    Let the cake cool completely. If desired, you can dust it with powdered sugar or drizzle it with melted chocolate.
