In the middle of the North Atlantic, at coordinates N 38°36′6″ W 28°1′9″, lies the Biosphere Reserve of the Azores island of São Jorge – one of the most pristine regions in Europe. Here, far from industrial fishing, the tuna of Santa Catarina is still caught traditionally by hand – using the environmentally friendly "salto e vara" method, in which each fish is brought aboard individually with a fishing rod.
This sustainable fishing method prevents bycatch and protects marine ecosystems. The freshly caught tuna pieces are then carefully processed and marinated in high-quality organic sunflower oil – for the best taste and highest quality.
