Panela is a Latin American food obtained by boiling sugarcane juice at high temperatures. The resulting viscous molasses is poured into cuboid or round molds and dried.
Panela consists, among other things, of sucrose and fructose and contains calcium, iron, phosphorus and ascorbic acid. Since panela has a similar consistency to regular sugar and one gram of panela is exactly one gram of sugar, you can use it just like white sugar for sweetening, baking or cooking.
