Already known in Viking times, it was the staple food for Portuguese sailors. The dried and salted stockfish, called bacalhau in Portugal. Immediately after the cod fish were caught in the cold northern seas, they were cleaned and salted. And then dried in the air on long sticks, hence the name cod, which loses up to 80% of the liquid and therefore keeps very well.
Properly prepared at Cântara , i.e. watered and desalted for about 36 hours, gently grilled, preserved in fine olive oil with a little garlic, this firm and juicy fish is a delicacy.
