Beirabaga's angel hair pumpkin fruit spread is made from the fig leaf pumpkin (Cucurbita ficifolia), a traditional pumpkin variety from western Portugal. The fine, fibrous strips of fruit resemble angel hair in their texture – hence the name.
This fruit spread is undoubtedly the most elaborate specialty in the range, but the effort is worth it: In terms of taste, it is delicate, aromatic and pleasantly sweet, with a fine texture that is second to none.
The recipe originates from the traditional knowledge of Portuguese nuns who centuries ago produced delicious fruit spreads without any additives. To this day, Beirabaga completely avoids artificial colors, preservatives, gelling agents, and flavor enhancers. Instead, only ripe pumpkins and sugar are used – gently processed with great attention to detail.
