Santa Catarina pâtés are made from tuna caught using the centuries-old method of pole and line fishing, the only environmentally sustainable method.
The pâtés are made by hand, without the use of emulsifiers, sweeteners, preservatives, or other additives or technological aids. They are a purely artisanal product, with the parsley, onions, garlic, and peppers hand-chopped, with all the flavor of the people of São Jorge.
At the National Food Products Competition organized by CNEMA and the National Agricultural Fair, the Azores Canning Factory won a gold and a silver medal in the fish paste category for its tuna pâté with oregano and its tuna pâté.
