Harvest:
The fresh shoots of the rooibos bush with the small green leaves are harvested in the South African summer from January onwards.
The rooibos is cut into 2 to 3 mm long pieces using special machines and then lightly crushed.
Before being prepared in this way, the green waste is moistened and then piled up in a thick layer and pressed or rolled. (Fermented tea is dried in the sun.) In the warmth, fermentation takes place over several hours to produce rooibos tea/rooibos tea. Natural chemical processes take place and result in the fruity, vanilla-like taste and the copper-red color.
The fermentation is ended by spreading the tea thinly in the sun, turning it several times and drying it quickly.
