Translated, Olho de perdiz means: the potato with eyes like the red-eyed partridge.
They have red dots on the peel, which can sometimes be found in the flesh, and white, tasty flesh. The potatoes are very easy to peel because the “rosy eye spots” are not deep.
In the kitchen, it is one of the more floury types of potatoes and can be used in many different ways. A small/medium variety in size.
