Lemon balm, also known as Melissa officinalis, releases a pleasant, lemony-fresh scent when its leaves are crushed – hence its name. Botanically, it is called Melissa officinalis, and colloquially it is also known as bee balm or priest's balm.
This refreshing and mild herb is excellent for herbal tea blends, both hot and cold. Lemon balm is especially popular in evening teas or summer herbal lemonades.
The leaves are gently dried to preserve their delicate aroma and valuable ingredients.
