The original gourmet pine nuts from Portugal.
The special thing is the unmistakable, excellent one
Taste of Portuguese pine nuts.
Pine nuts are the shelled seeds throughout
Pine cultivated in the Mediterranean region.

The stone pine (Pinus pinea L) that grows here has been associated with this for centuries
adapted to the local, hot and very dry climate in summer.
The trees here are not susceptible to pests and diseases
Nature conservation measures in recent decades have achieved a good eco-climate
with lots of mammals, insects, reptiles and amphibians.
The harvest can be described as not being harmful to the ecosystem.

Pine nuts---a lot of manual work!

The whitish edible kernel grows in the pine cones.
The pine cones are harvested manually between October and April.
Only when the cones are very dry will the pine nuts loosen.
and are removed from the cones by hand.

The hard nut shell is cracked and removed.
Then it becomes even more fiddly and tedious.
The fine, brown skin is carefully removed.
No further treatment takes place. Raw food
