Sichuan pepper (Zanthoxylum piperitum) is not related to black pepper (Piper nigrum). It has a sharp, sparkling taste with a light lemon aroma and goes well with fish, pork, chicken, duck and soups, rice and noodles.
It is very popular in Chinese cuisine.
TIP: Lightly roast the peppercorns without fat in a coated pan before grinding. This allows the aroma to develop best.

    Recipe: Mozzarella with marinated strawberries and Sichuan pepper:
    1 untreated orange
    1 untreated lemon
    4 tbsp cane sugar
    60 ml port wine
    Lemon balm
    300g mozzarella
    500g strawberries
    Sichuan pepper to taste
    Preparation:
    Peel off the orange peel with a zester and chop finely. Squeeze lemon and orange.
    Caramelize the sugar in a pan and deglaze with the fruit juice and port wine.
    Chop lemon balm, wash strawberries and cut into slices. Cut mozzarella into thin slices.
    Arrange the mozzarella and strawberries on a plate.
    Spread the sugar marinade on top.
    Then sprinkle the orange peel, lemon balm and ground Sichuan pepper on top.
    A fruity, light dessert.
