1. Lime cheesecake with coconut

Lime cheesecake with coconut

This cheesecake is a perfect combination of creamy freshness and exotic flavor. The lime adds a touch of acidity, while coconut provides a gentle sweetness and a hint of tropical flavor.

Ingredients:

  • For the floor :

    • 200 g biscuits (e.g. wholemeal biscuits or butter biscuits)
    • 100 g melted butter
  • For the filling :

    • 600 g cream cheese
    • 200 g sugar
    • 200 ml coconut milk
    • Juice and zest of 2 limes
    • 3 eggs
    • 1 tsp vanilla extract
  • Topping :

    • Roasted coconut flakes
    • Lime zest

Preparation :

  1. Preheat oven to 160°C (top/bottom heat). Grease a springform pan and line the bottom with baking paper.
  2. Finely crumble the biscuits and mix with the melted butter. Press the mixture evenly into the springform pan and pre-bake for about 10 minutes.
  3. In a large bowl, cream together the cream cheese and sugar until smooth. Add the coconut milk, lime juice, lime zest, eggs, and vanilla extract and mix well.
  4. Pour the filling onto the pre-baked base and bake in the oven for about 50-60 minutes, until the center is just set.
  5. Let the cheesecake cool and then let it set in the refrigerator for at least 4 hours.
  6. Garnish with toasted coconut flakes and lime zest before serving.

2. Classic Lime Cheesecake

Ingredients:

  • For the floor :

    • 200 g butter biscuits
    • 100 g melted butter
  • For the filling :

    • 500 g cream cheese
    • 200 g crème fraîche
    • 150 g sugar
    • Juice and zest of 2–3 limes
    • 3 eggs

Preparation :

  1. Preheat oven to 160°C. Prepare a springform pan.
  2. Crumble the biscuits, mix with butter and press into the pan.
  3. Mix the cream cheese, crème fraîche, sugar, lime juice and zest, and the eggs until creamy.
  4. Pour the filling onto the base and bake for 50 minutes.
  5. Allow to cool thoroughly and refrigerate for at least 3 hours.

3. Lime mousse with yogurt

Lime mousse

A light, airy mousse with lime and yogurt, which is a refreshing treat, especially on warm days.

Ingredients:

  • 200 ml cream
  • 250 g natural yogurt
  • Juice and zest of 2 limes
  • 80 g sugar
  • 2 tsp gelatin powder or agar agar
  • Fresh lime slices for decoration

Preparation :

  1. Whip the cream until stiff and refrigerate.
  2. Mix yogurt, sugar, lime juice and lime zest in a bowl.
  3. Prepare gelatine according to package instructions and stir into the yogurt-lime mixture.
  4. Carefully fold in the whipped cream until a homogeneous mousse is formed.
  5. Pour into glasses or small bowls and refrigerate for at least 2 hours.
  6. Decorate with lime slices and serve chilled.

4. Lime Tart


This lime tart is a perfect balance of sweet and sour with a crispy crust and a refreshing lime filling.

Ingredients:

  • For the shortcrust pastry :

    • 200 g flour
    • 100 g cold butter
    • 50 g sugar
    • 1 egg
  • For the filling :

    • 3 egg yolks
    • 150 ml lime juice (freshly squeezed)
    • zest of 2 limes
    • 150 g sugar
    • 100 ml cream

Preparation :

  1. Knead flour, sugar, butter, and egg into a shortcrust pastry. Wrap the dough in cling film and chill for 30 minutes.
  2. Roll out the dough, place it in a tart pan, and prick the base several times. Blind bake at 180°C for about 10 minutes.
  3. In a bowl, combine the egg yolks, lime juice, lime zest, sugar, and cream. Pour the filling onto the pre-baked crust and bake for approximately 20–25 minutes, until firm to the touch.
  4. Allow to cool and refrigerate before serving.

5. Almond cookies with lime

Crispy almond cookies with lime zest are a perfect snack between meals and ideal as a gift.

Ingredients:

  • 150 g butter (room temperature)
  • 100 g sugar
  • zest of 2 limes
  • 200 g flour
  • 50 g ground almonds
  • 1 pinch of salt

Preparation :

  1. Beat butter and sugar until creamy, add lime zest.
  2. Mix the flour, almonds and salt and gradually stir in until a smooth dough is formed.
  3. Form the dough into a roll and place it in the refrigerator for 30 minutes.
  4. Cut the dough into slices about 0.5 cm thick and place them on a baking tray.
  5. Bake at 180°C for about 10-12 minutes until the edges are light golden brown.
  6. Let cool and store in a cookie tin.
