Agar agar is the ideal plant-based gelling agent for anyone who wants to avoid animal products. It is completely tasteless and versatile – from desserts and jams to soups and ice cream.

Agar-agar is extracted from the cell walls of certain red algae species (including Gracilaria , Gelidium , and Hypnea ) and corresponds to the food additive E 406 according to EU regulations. It is an excellent vegetarian and vegan substitute for gelatin, but its binding properties are significantly stronger – even small amounts are sufficient for a firm hold.

Application note:
